Zoë Balsamic is the perfect blend of grape must and red wine vinegar that is aged for different periods of time in a variety of wood barrels. When blended together they create a sweet and tangy Balsamic Vinegar. The product is produced from the juice of just-harvested grapes which are then fermented with a slow aging process that concentrates the flavours. The flavour intensifies over the years, the vinegar being stored in wooden casks becomes sweet, viscous, and very concentrated.
The difference between the dark and the white balsamic vinegar is that a small amount of red wine vinegar is used during the process, compared to the white balsamic which uses a small amount of white wine vinegar. Both vinegars are excellent alone or combined with Zoe's extra virgin olive oil.
